The Quarter Bistro is proud to present Chef Ernest Prokos, a master of seven national cuisines and more than 45 years in the kitchen. Chef Prokos has accumulated thousands of recipes over the years, and brings the best of these to our menu. “Nothing leaves my kitchen without a little piece of my heart in it,” says Chef Prokos. “Cook with your heart, make food with your hands” is his motto. This approach endows the chef with a creativity that results in inventive and exciting cuisine. Chef Prokos loves his guests, and is always happy to hear opinions and advice about the variety inherent in their dinning choices.
